Banana Bread French Toast

Yields: ~2-4

Ingredients 

2 Slices of Banana Bread (3/4 inch slices)

1 Large Egg

1 Egg Yolk

3 Tbsp Granulated White Sugar

1/2 tsp Ground Cinnamon

1/2 tsp Ground Nutmeg

1 tsp Vanilla Extract

Whipped Cream:

1 cup Heavy Whipping Cream

1 Tbsp Granulated White Sugar

1 tsp Vanilla Extract

Pinch of  Coarse Salt

Toasted Pecan Topping:

1/4 cup halved Pecans

1/2 tsp Ghee/Butter

Pinch of Salt

Garnish:

Fresh Fruit (Bananas, Strawberries, Blueberries, etc.)

Powdered Sugar

Pure Canadian Maple Syrup 🇨🇦

1 Tbsp for optional Bruleed topping

Equipment:

Medium Mixing Bowl

Small Mixing Bowl

Hand Mixer / Whisk

Kitchen Torch (Optional)

Non-stick Skillet

Stovetop

Directions:

  1. Prep: Cut loaf into 3/4 inch slices.

  2. Make Custard: In a medium mixing bowl, combine eggs, sugar, spices, vanilla extract, and salt. Whisk together until smooth. This should make enough custard for up to 4 slices.

  3. Fry: In a non-stick skillet over medium-high heat, add about 1 tsp of ghee (or butter). Carefully dip each banana bread slice into the custard one at a time, and allow the excess custard to drip back in the bowl. Place the dipped banana bread in the skillet and fry for about 1-2 minutes or until golden brown. Flip and repeat on each side of the french toast. Place on a wire rack to cool slightly.

  4. Make toasted pecans: While the french toast is resting, add about a teaspoon of ghee (or butter) to the skillet, along with the pecans, and salt. Toss to coat, and toast for about 2 minutes, or until fragrant and pecans toasted to your liking.

  5. Optional Bruleed Topping: Sprinkle about a tablespoon of white sugar on the top of french toast slices. Using a kitchen torch, carefully melt the sugar until sugar starts to bubble. Take care not to burn the sugar! If you don’t have a kitchen torch, you can use the broil setting on your oven. However, don’t take your eyes off it, because the sugar will quickly burn if left too long.

  6. Make Whipped Cream: In a small mixing bowl, add cream, vanilla extract, sugar, and salt. Whisk until stiff peaks.

  7. Plate & Enjoy: Plate french toast and add a dollop of whipped cream and pecans on top. Serve with fresh fruit, a generous dusting of powdered sugar, and maple syrup. Enjoy!
